EBD Recipe: Cauliflower Rice

Eat By Design

Prep time: 10 minutes

Cook time: 10 minutes

Special equipment: food processor

Ingredients

  •  1 head cauliflower, washed and cut up into florets
  • 2 tablespoons butter

Steps

  1. Grate or pulse the cauliflower florets in a food processor until it resembles rice.
  2. Place a large pan on the stove.
  3. Melt the butter in the pan over medium heat.
  4. Place the grated cauliflower in a pan.
  5. Cook until tender, about 10 minutes, stiring occasionally.
  6. Transfer the cauliflower into a bowl.
  7. Serve with Slow Cooked Thai Chicken Stew.
