EBD Recipe: Broccoli Salad

Eat By Design

Prep time: 15 minutes

Cook time: none

Special equipment: handheld or immersion blender

Ingredients

  • 1 head broccoli, finely chopped
  • ¼ cup red onion, finely chopped
  • ½ cup dates, pit removed and chopped finely
  • ½ cup homemade mayonnaise
  • 2 tsp dried dill
  • 1 tablespoon apple cider vinegar

 Steps

  1. In a large bowl combine the broccoli, red onion and dates.
  2. In a separate bowl, combine the mayo, dill and apple cider vinegar
  3. Pour all over the broccoli salad and toss to combine evenly.
  4. If you really want to step up your game, add bacon!

Serves 4
