EBD Recipe: Watermelon Relish

Eat By Design

Prep time: 10 minutes

Cook time: none

Special equipment: none

Ingredients:

  • 1½ cups watermelon, ½ cm dice
  • ½ English cucumber, ½ cm dice
  • ½ cup red onion, finely diced
  • 1 tomato, ½ cm dice
  • ¼ cup white balsamic vinegar
  • 2 limes, juiced
  • 1 tbsp fresh mint, finely chopped
  • 1 tbsp fresh cilantro, finely chopped
  • 1 tsp sea salt
  • Fresh ground black pepper to taste

Steps:

  1. Mix all of the relish ingredients in a bowl.
  2. Wrap the bowl with plastic wrap and store in the fridge for at least 1½ hours.
  3. Serve with your favourite barbecued meat. We love pork or chicken sausages.
