Ingredients:
- 1½ cups watermelon, ½ cm dice
- ½ English cucumber, ½ cm dice
- ½ cup red onion, finely diced
- 1 tomato, ½ cm dice
- ¼ cup white balsamic vinegar
- 2 limes, juiced
- 1 tbsp fresh mint, finely chopped
- 1 tbsp fresh cilantro, finely chopped
- 1 tsp sea salt
- Fresh ground black pepper to taste
Steps:
- Mix all of the relish ingredients in a bowl.
- Wrap the bowl with plastic wrap and store in the fridge for at least 1½ hours.
- Serve with your favourite barbecued meat. We love pork or chicken sausages.
