EBD Recipe: Chicken Curry Meatballs

Eat By Design

Prep time: 15 minutes

Cook time: 30 minutes

Special equipment: spiralizer, cheese grater

Ingredients

  • 2 lbs. ground chicken thighs
  • 1 zucchini, shredded
  • 4 zucchinis, spiralized
  • 1 carrot, peeled and shredded
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, minced
  • 2 tsp. sesame oil
  • 2 tbsp. curry powder
  • Salt and pepper to taste

Steps

  1. Preheat the oven to 350ºF.
  2. Peel the carrot. Then using a cheese grater, grate the carrot and place it into a large mixing bowl.
  3. Grate the zucchini and place it into the bowl.
  4. Add the garlic, ginger and chicken to the bowl. Combine with clean hands.
  5. Once combined add the sesame oil, curry powder and salt and pepper.
  6. Roll into meatballs and place on an aluminum foil lined baking sheet. Bake in the oven for 30 minutes.
  7. Serve ontop of spiralized zucchinis or zucchini "noodles."
