Cook time: 30 minutes
Special equipment: spiralizer, cheese grater
Ingredients
- 2 lbs. ground chicken thighs
- 1 zucchini, shredded
- 4 zucchinis, spiralized
- 1 carrot, peeled and shredded
- 2 cloves garlic, minced
- 1 inch piece of ginger, minced
- 2 tsp. sesame oil
- 2 tbsp. curry powder
- Salt and pepper to taste
Steps
- Preheat the oven to 350ºF.
- Peel the carrot. Then using a cheese grater, grate the carrot and place it into a large mixing bowl.
- Grate the zucchini and place it into the bowl.
- Add the garlic, ginger and chicken to the bowl. Combine with clean hands.
- Once combined add the sesame oil, curry powder and salt and pepper.
- Roll into meatballs and place on an aluminum foil lined baking sheet. Bake in the oven for 30 minutes.
- Serve ontop of spiralized zucchinis or zucchini "noodles."
