EBD Recipe: Chicken Fajitas

Prep time: 10 minutes

Cook time: 20 minutes

Special equipment: cast iron skillet

Ingredients

  • 2-3 lbs chicken
  • 1/2 tsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 2 tsp chili powder
  • 1 1/2 tsp sea salt
  • 2 tablespoons butter
  • 1 onion, sliced fine
  • 1 red pepper, julienned
  • 1 green pepper, julienned
  • 1 head of romaine lettuce
  • 1 lime
  • Full fat Greek yogurt, salsa and By Design guacamole

Steps

  1. Rub the spices (paprika, cumin, garlic powder, sea salt) on the chicken.
  2. Prepare the peppers and onion.
  3. Over medium to low heat melt the butter into the cast iron skillet.
  4. Add the peppers and onion and cook until slightly softened, about 7-10 minutes. Remove them from the pan.
  5. In the same pan, increase the heat to medium high and add the chicken. Once cooked, slice into thin strips.
  6. Remove and wash whole lettuce leaves and slice the lime. Set aside into small bowls.
  7. Place yogurt, salsa and guacamole into bowls as well.
  8. Place lettuce on the plate, top with chicken and vegetables and add your desired toppings.
