EBD Recipe: Simple Balsamic Dressing

Eat By Design

Prep time: 5 minutes

Cook time: none

Special equipment: immersion blender, mason jar

Ingredients

  • 1 clove garlic, diced finely
  • Juice of 1 lemon
  • 2 tablespoons dijon mustard
  • 2 tablespoons balsamic vinegar (can use white balsamic vinegar for a sweeter taste)
  • 1 cup olive oil
  • Salt and pepper to taste

Steps

  1. Place all of the ingredients in a mason jar.
  2. Either place the lid on the mason jar and shake vigorously, or use a mason jar wide enough to fit an immersion blender inside and blend for 30 seconds.
  3. Mix into a warm sweet potato, spinach and apple salad and top with toasted pumpkin seeds.
