Special equipment: cast iron skillet
Ingredients
- 2-3 lbs chicken
- 1/2 tsp paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 2 tsp chili powder
- 1 1/2 tsp sea salt
- 2 tablespoons butter
- 1 onion, sliced fine
- 1 red pepper, julienned
- 1 green pepper, julienned
- 1 head of romaine lettuce
- 1 lime
- Full fat Greek yogurt, salsa and By Design guacamole
Steps
- Rub the spices (paprika, cumin, garlic powder, sea salt) on the chicken.
- Prepare the peppers and onion.
- Over medium to low heat melt the butter into the cast iron skillet.
- Add the peppers and onion and cook until slightly softened, about 7-10 minutes. Remove them from the pan.
- In the same pan, increase the heat to medium high and add the chicken. Once cooked, slice into thin strips.
- Remove and wash whole lettuce leaves and slice the lime. Set aside into small bowls.
- Place yogurt, salsa and guacamole into bowls as well.
- Place lettuce on the plate, top with chicken and vegetables and add your desired toppings.
