Special equipment: immersion blender, mason jar
Ingredients
- 1 clove garlic, diced finely
- Juice of 1 lemon
- 2 tablespoons dijon mustard
- 2 tablespoons balsamic vinegar (can use white balsamic vinegar for a sweeter taste)
- 1 cup olive oil
- Salt and pepper to taste
Steps
- Place all of the ingredients in a mason jar.
- Either place the lid on the mason jar and shake vigorously, or use a mason jar wide enough to fit an immersion blender inside and blend for 30 seconds.
- Mix into a warm sweet potato, spinach and apple salad and top with toasted pumpkin seeds.
