EBD Recipe: N'Oatmeal

Eat By Design

Prep time: 15 mins

Cook time: 15 mins

Ingredients

  • 1 cup raw cashews
  • 1 cup raw almonds
  • 1 cup raw pecans
  • 2 very ripe bananas
  • 1 can of full fat coconut milk
  • 3 teaspoons cinnamon
  • 1 teaspoon fresh ground nutmeg
  • 1 teaspoon vanilla
  • Dash of sea salt

 Steps

  1. Place all the nuts in a large bowl and sprinkle the salt overtop.
  2. Fill the bowl with water so the nuts are covered and soak overnight.
  3. Drain the nuts in the morning and rinse them well.
  4. Add the drained nuts to a food processor.
  5. Blend the nuts with the bananas, coconut milk, cinnamon, nutmeg and vanilla until smooth.
  6. Heat on the stove each morning.
  7. Serve with raisins or chopped nuts.
