EBD Recipe: Blueberry Breakfast Patties

Prep time: 5 minutes

Cook time: 30 minutes

Special equipment: cast iron skillet

Ingredients

  • 2 pounds ground turkey
  • 4 tablespoons maple syrup
  • 1 cup frozen blueberries
  • 1 tablespoon fresh rosemary, chopped finely
  • Salt and pepper to taste
  • 2 tablespoons coconut oil or ghee

Steps

  1. Combine ground turkey, maple syrup, frozen blueberries, rosemary and salt and pepper in a large bowl.
  2. Combine with your hands.
  3. Form into small patties.
  4. In a cast iron skillet heat coconut oil or ghee on medium heat.
  5. Add the sausage patties to the skillet in two separate batches.
  6. Cook the sausage patties for 7-8 minutes a side.

Yields 12-14 breakfast patties.
