Ingredients
- 1 tablespoon coconut oil or butter
- 1 large onion, diced
- 2 garlic cloves, sliced
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon paprika
- 3 pounds ground beef
- 1-cup homemade beef or chicken stock
- Salt and pepper to taste
- Large whole leaves of romaine lettuce
- 2-3 tomatoes, diced
- Salsa, guacamole, cilantro, hot sauce, sour cream (or Greek yogurt) and shredded raw cheddar cheese are optional
Steps
- Heat the coconut oil in a large skillet over medium heat.
- Cook the onion until it is soft and translucent.
- Add your garlic, chili powder, paprika and cumin, cooking it for 1-2 minutes.
- Add the beef and stir until it has browned. You can season the ground beef with salt and serve it immediately or proceed to the next step for a more developed flavor.
- Pour in the stock, cover, and cook over low heat for 30-40 minutes.
- Season the ground beef with salt and pepper if needed and remove from the heat.
- Fill the lettuce wraps with beef, salsa, guacamole, cilantro, sour cream or Greek yogurt, hot sauce and shredded raw cheddar cheese.
