EBD Recipe: By Design Hummus

Eat By Design

Prep time: 10 minutes

Cook time: none

Kitchen tools needed: food processor

Ingredients:

  • 4 cups zucchini, peeled and chopped
  • ¾ cup sesame tahini
  • ¼ cup olive oil
  • Juice of 2 lemons
  • Juice of 1 more lemon
  • ½ garlic clove, minces
  • ¼ tablespoon cumin
  • 2 teaspoons sea salt
  • ¼ teaspoon smoked paprika (for garnishing) 

Steps:

  1. Place all ingredients except paprika and additional lemon juice in your food processor and process until combined to a smooth, paste like consistency.
  2. If the consistency is too thick, add additional lemon juice.
  3. Pour the mix into a bowl.
  4. Sprinkle paprika and a dribble of olive oil on top.
  5. Serve immediately with raw veggies.
  6. Increase the amount of garlic and cumin if you like bite!
