Kitchen tools needed: food processor
Ingredients:
- 4 cups zucchini, peeled and chopped
- ¾ cup sesame tahini
- ¼ cup olive oil
- Juice of 2 lemons
- Juice of 1 more lemon
- ½ garlic clove, minces
- ¼ tablespoon cumin
- 2 teaspoons sea salt
- ¼ teaspoon smoked paprika (for garnishing)
Steps:
- Place all ingredients except paprika and additional lemon juice in your food processor and process until combined to a smooth, paste like consistency.
- If the consistency is too thick, add additional lemon juice.
- Pour the mix into a bowl.
- Sprinkle paprika and a dribble of olive oil on top.
- Serve immediately with raw veggies.
- Increase the amount of garlic and cumin if you like bite!
