EBD Recipe: Beef Tacos

Prep Time: 10 minutes

Cook Time: 45 minutes

Special Equipment: large skillet

Ingredients

  • 1 tablespoon coconut oil or butter
  • 1 large onion, diced
  • 2 garlic cloves, sliced
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • 3 pounds ground beef
  • 1-cup homemade beef or chicken stock
  • Salt and pepper to taste
  • Large whole leaves of romaine lettuce
  • 2-3 tomatoes, diced
  • Salsa, guacamole, cilantro, hot sauce, sour cream (or Greek yogurt) and shredded raw cheddar cheese are optional

 Steps

  1. Heat the coconut oil in a large skillet over medium heat.
  2. Cook the onion until it is soft and translucent.
  3. Add your garlic, chili powder, paprika and cumin, cooking it for 1-2 minutes.
  4. Add the beef and stir until it has browned. You can season the ground beef with salt and serve it immediately or proceed to the next step for a more developed flavor.
  5. Pour in the stock, cover, and cook over low heat for 30-40 minutes.
  6. Season the ground beef with salt and pepper if needed and remove from the heat.
  7. Fill the lettuce wraps with beef, salsa, guacamole, cilantro, sour cream or Greek yogurt, hot sauce and shredded raw cheddar cheese.
