Ingredients
- 3 large ripe bananas
- 4 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/8 teaspoon corn-free baking powder
- Grass fed butter
- Fresh fruit (optional)
Steps
- In a medium bowl, mash the bananas using a potato masher or back of a fork.
- In a separate bowl combine the eggs and vanilla. Whisk.
- Add egg mixture to bananas.
- Add cinnamon and baking powder to mixture and stir to combine.
- Over medium-low heat melt a lttle butter n the pan.
- Add mixture by the 1/4 cup and allow to cook for 1-2 minutes per side or until the pancake appears to set.
- Flip.
- Serve with fresh fruit and more grass fed butter.
