EBD Recipe: Banana Pancakes

Eat By Design

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients 

  • 3 large ripe bananas
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon corn-free baking powder
  • Grass fed butter
  • Fresh fruit (optional)

 Steps

  1. In a medium bowl, mash the bananas using a potato masher or back of a fork.
  2. In a separate bowl combine the eggs and vanilla. Whisk.
  3. Add egg mixture to bananas.
  4. Add cinnamon and baking powder to mixture and stir to combine.
  5. Over medium-low heat melt a lttle butter n the pan.
  6. Add mixture by the 1/4 cup and allow to cook for 1-2 minutes per side or until the pancake appears to set.
  7. Flip.
  8. Serve with fresh fruit and more grass fed butter.

Yields 8 pancakes
