Ingredients
- 1 pound ground sausage meat (flavor of your choice)
- 1 tablespoon butter or bacon drippings
- 1 medium onion, chopped into 1/2 inch pieces
- 4 stalks of celery, finely chopped
- 2 apples, finely chopped
- 4-6 fresh sage leaves, chopped, or 1 teaspoon dry
- 1⁄4 cup dried cranberries
- 1⁄4 cup homemade chicken or turkey stock. If you are cooking a turkey at the same time you can just take some of the juices from the roasting pan and mix it with enough water to make 1/4 cup.
- 1 cup macadamia nuts or cashews, roasted and chopped
- Pepper
Steps
- If your sausages are in links, squeeze the meat out from the casings.
- In a large pan, over medium heat, brown the sausage. Remove from pan into covered bowl and set aside.
- Melt butter or bacon drippings in the pan.
- Add onion and cook over medium heat, about 5 minutes, stirring occasionally, until the onion becomes translucent.
- Add celery, apples and sage.
- Stir and cook over medium heat for about 10 minutes or until the apples have slightly softened.
- Add stock and cranberries. Stir and cook for another 4 minutes.
- Return sausage meat to pan and add roasted nuts, salt and pepper. Mix well
- Serve immediately or place in oven for a few minutes to warm.
