Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients

  • 1 pound ground sausage meat (flavor of your choice)
  • 1 tablespoon butter or bacon drippings
  • 1 medium onion, chopped into 1/2 inch pieces
  • 4 stalks of celery, finely chopped
  • 2 apples, finely chopped
  • 4-6 fresh sage leaves, chopped, or 1 teaspoon dry
  • 1⁄4 cup dried cranberries
  • 1⁄4 cup homemade chicken or turkey stock. If you are cooking a turkey at the same time you can just take some of the juices from the roasting pan and mix it with enough water to make 1/4 cup.
  • 1 cup macadamia nuts or cashews, roasted and chopped
  • Pepper

Steps

  1. If your sausages are in links, squeeze the meat out from the casings.
  2. In a large pan, over medium heat, brown the sausage. Remove from pan into covered bowl and set aside.
  3. Melt butter or bacon drippings in the pan.
  4. Add onion and cook over medium heat, about 5 minutes,
stirring occasionally, until the onion becomes translucent.
  5. Add celery, apples and sage.
  6. Stir and cook over medium heat for about 10 minutes or until
the apples have slightly softened.
  7. Add stock and cranberries. Stir and cook for another 4
minutes.
  8. Return sausage meat to pan and add roasted nuts, salt and
pepper. Mix well
  9. Serve immediately or place in oven for a few minutes to warm.

Serves 6 as a side dish.
